Cookies 'N Cream Cupcakes

I wanted to try these delectable cupcakes and they did not disappoint. The original recipe called for a whipped cream frosting and I wanted cream cheese, so I combined two into one. They did not disappoint.

COOKIES AND CREAM CUPCAKES

2 Pkgs. Oreo cookies (You can use the generic brand but I found Oreos have a cleaner twist)
1 package (16.25 ounces) plain white cake mix
1 cup sour cream
1/2 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract

1. Place a rack in the center of the oven and preheat the oven to 350°F. Line 24 cupcake cups with paper liners. Set the pans aside.
2. Twist the top off of 24 Oreos. Place the side with icing, icing side up in the bottom of the cupcake liner. Place the lids in a plastic bag. Add 10 more Oreos to the bag and crush with a mallett. Set these crumbs aside.
3. Place the cake mix, sour cream, oil, eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 1 1/2 minutes more, scraping down the sides again if needed. Measure out 1 1/2 cups of the crushed Oreos and fold these into the batter until well incorporated. Set aside the remaining crushed Oreos for the frosting. Using a large cookie scoop divide batter into each lined cup, filling it three quarters of the way full. Place the pans in the oven.
4. Bake the cupcakes for 18 or until an inserted cake tester comes out clean. Remove the pans from the oven and place them on wire racks to cool before frosting.

Cream Cheese Frosting
8 oz. cream cheese, at room temperature
6 tbsp. unsalted butter, at room temperature
1 tbsp. vanilla extract
4 cups confectioners’ sugar, sifted
2 tbsp. heavy cream

In my opinion, Cream Cheese Frosting is best when it has a day to sit, so I would recommend making it in advance.
Combine the cream cheese and butter in the bowl of an electric mixer and beat on medium-high speed until smooth, about 1 minute. Blend in the vanilla extract. Beat in the confectioners’ sugar until incorporated and smooth, 1-2 minutes. Add the heavy cream to the bowl and beat on medium-low speed just until incorporated, then increase the speed to medium-high and whip for 4 minutes until light and fluffy, scraping down the sides of the bowl as needed.

All my watching of Cupcake Wars has paid off. I learned that by using a large cookie scoop, you will get the perfect amount of batter.
